Vegetable vermicelli / Vegetable Semiya





Ingredients

vermicelli - 180grams
onion - 1
Tomato - 1
Green Chili - 2
Ginger garlic paste - 1 tsp spoon
Carrot - 1
Peas - 1/4 cup
Bay leaf -1
cinnamon - 1 piece
Fennel - 1/2 tablespoon
Oil - 4 tablespoon
Urad dal - 1 tsp spoon
mustard seeds - 1/2 tablespoon
Curry leaves - little bit
Coriander - Garnish
Cashews - 5
Salt - Required to taste

Preparation:

   Heat oil in a pan then add mustard seeds. Add urad dal, cashews,bay leaf,cinnamon,fennel,saute well.

  Add chopped onion, green chili, chopped ginger and curry leaves and saute well. Next add tomatoes and mix well.

To the pan add the mixed vegetables and stir fry for a  minute.
Next add 2 cups of water to the pan stir well.

Add required salt and mix well.
When the water starts to boil add the roasted vermicelli and mix well.

close the pan and cook vermicelli in low flame till all the water is absorbed and the vermicelli cooked completely.

Add a teaspoon of ghee and garnish the vermicelli with coriander leaves.
Serve the delicious and tasty vermicelli
